Hello Everyone 

This time I am bringing you all a delicious brunch recipe which is semi home made  . This is a very short sweet post with some home made components and some store bought items . The whole idea behind this post is how to put it all together and enjoy this delicious brunch with your family , enjoy this in your patio or deck with you loved ones and make this day extra special 

This brunch has several components , both home made and store bought . First let me list the items in it. 

  1. Shakshuka (Home Made)
  2. Sriracha Hummus (Store Bought ) 
  3. Pita (Store Bought 
  4. Yogurt Parfait (Home made) 
  5. Orange Iced Tea (Home made) 

I will explain the recipes for shakshuka , yogurt parfait and the iced tea first . Then in the end will explain how to arrange all the components for your brunch 

First let’s see how to make Shakshuka . Shakshuka is a breakfast dish very popular in countries like turkey , morocco or Israel . This dish is basically poached eggs in a spicy gravy and its very very delicious to eat it as a brunch . The spicy tomato gravy complements so well with the eggs and its heaven when you dip your warm pitas in it . Now let’s see how to make this dish

Ingredients
  1. Eggs- 2
  2. Olive Oil- 1/2 TBSP
  3. Onions - Chopped 3 TBSP
  4. Garlic - Chopped 2 cloves
  5. Red Bell pepper - Chopped 2 TBSP
  6. Tomatoes- Chopped 1 medium
  7. Tomato Puree - 1 TBSP
  8. Cumin powder - 1/2 tsp
  9. Paprika - 1/2 tsp
  10. Salt - As needed
Instructions
  1. 1. In a skillet heat olive oil then add onions and garlic saute it till the raw smell goes and the onion is transparent
  2. 2. Now to this add cumin powder , paprika and salt saute for 30 seconds
  3. 3. Add red bell pepper saute for another 30 seconds .
  4. 4. To this add chopped tomatoes and tomato puree with little water and cook it for 30 seconds in medium heat .
  5. 5. Now make little wells in the tomato onion mixture . Break eggs and add one egg to each well .
  6. 6. Cover the skillet cook for 1 minute if you like wiggly yolk , 2 minutes for medium , I wouldn't recommend hard because it will burn the tomato base then
  7. 7. Optional garnish with some chopped parsley

Next we will go into the recipe for a delicious home made yogurt parfait. This recipe is inspired by a Rachel Ray recipe which I found when I was googling for an easy parfait recipe . So easy to make with few ingredients easily available in your pantry . I have made this using frozen mixed berries feel free to use any fruit of your choice like mangoes , peaches or even a mix of two different kinds of fruits and this is the simplest recipe I have made in my life LOL. So let’s see how it is made

Ingredients
  1. Frozen Mixed Berries- 3 Tbsp
  2. Yogurt- 3 Tbsp
  3. Granola- 2 Tbsp or more if you like
Instructions
  1. 1. If you are using frozen fruit make sure you defrost it over night in the fridge
  2. 2. Next day morning just 5 minutes before you serve your breakfast you can arrange your parfait . You can use mason jars , glasses or bowls anything of your choice .
  3. 3. First layer do fruits , then yogurt and top it off with granola just before serving , this is just to avoid the granola being soggy

The last component of the brunch which I am going to write is the delicious summery drink Orange Iced Tea.  I have made this iced tea from scratch freshly brewed and with some delicious fresh squeezed OJ some sweetener and lots of love thats my secret ingredient LOL.  Making this iced tea isn’t rocket science , its really simple & straight forward  with few ingredients put together . I am not going to talk much about this recipe , instead i will just give you the directions .

Ingredients
  1. Black Tea bags- 2
  2. Water - 2 cups
  3. Freshly squeezed orange juice- 1/2 cup
  4. Sugar - 2 tsp , more if you like it sweeter , also alternatively you can use honey , agave or maple syrup
  5. Orange Slice for garnish
Instructions
  1. 1. Brew tea as usual , you can brew it in your method . I normally bring water to a rolling boil then add the tea bags to this hot water .
  2. 2. Add few ice cubes to this and add your favourite sweetener ,keep it in the fridge for like 15 minutes .
  3. 3. While the tea is cooling down we can make fresh orange juice . Squeeze 2 or 3 fresh oranges and sieve it to avoid any seeds getting into it.
  4. 4. Now the tea should be cool add this fresh orange juice to it and add sweetener if required . The tea is ready to be served , you can refrigerate it till its ready to be served

So these are the components of the semi home made brunch , you can make the iced tea and parfait in advance , then make the shakshuka and finally warm the pita and serve it all together .

Kanda Batata Poha -Spicy beaten rice flakes with onion & potato

Hello Everyone 

Today I am bringing you all a a very delicious staple breakfast dish from western parts of India . this dish is famous in several states around India , I made one which is closer to the one made in the state of Maharashtra . This recipe is not an authentic one , its my take on this delicious dish , I have adopted flavours from few south Indian dishes because I like to do that with every dish I cook . So if you see there is a difference from the authentic recipe what your mom or mother in law might have taught you , please don’t punish me LOL 😉 . So I dont have much to talk about this recipe , its not taught nay my mom , I learned it as a necessity after I moved to canada in 2012 because my husband loves it . 

When I made it for the first time , I messed it up so much this dish turned out to be a big goop of carb lol . Then I had to watch several videos , read a bit how to make it properly without making a goopy mess . I have watched a lot of videos like veg recipes of India , vah re vah , manjulas kitchen , nishamadhullika ; I can’t determine from where I formulated this recipe I think its a mix from all these . 

So I am going to stop blabbering and give you the recipe .

Ingredients
  1. Poha (Rice Flakes)- 11/2 cups
  2. Turmeric powder - 1/2 teaspoon
  3. Salt- As needed
  4. Oil - 4 Tablespoon
  5. Mustard Seeds - 1 teaspoon
  6. Whole red Chilies - 2 to 3
  7. Ginger - Chopped 1/2 teaspoon
  8. Asafoetida- A pinch
  9. Peanuts - Crushed 2 tablespoon
  10. Onion - 1/2 medium sized chopped
  11. Potatoes - One medium sized cubes
  12. Green Chillies - 1 or 2 chopped finely
  13. Cilantro - Chopped 2 tablespoon
  14. Sugar- A pinch
  15. Lemon Juice - From one lemon
  16. Water - As needed
Instructions
  1. 1. First we need to make the poha softer , if you dont do that you won't be able to make nice fluffy poha for breakfast . Place poha , 1/2 teaspoon turmeric powder and salt in a sieve , run water through it . When the poha is soaked enough then gently using hands mix it .
  2. 2. In a skillet heat 3 tablespoon oil then add chopped potatoes to it . Pan fry till the potatoes are golden brown then keep it aside
  3. 3. To the same skillet add one tablespoon oil, crackle half teaspoon of mustard seeds , then add ginger , green chillies saute well now add onions and saute till its transparent
  4. 4. When the onion is transparent add crushed peanuts to it and give it a stir . Now add the cooked potatoes to it little turmeric powder and stir . Add the prepared poha to it give it a good stir and keep it away from the heat
  5. 5. In a another small pan heat little oil add the rest of the mustard seeds to it, let it crackle . Add whole red chillies , asafoetida , lemon juice and almost 1/4 cup water . Add sugar to it bring it to a boil , add this mixture to the prepared poha give it a stir . Save with chopped cilantro and another squeeze of lemon juice . Enjoy it with a hot cup of ginger tea .
