Hello Everyone 

This time I am bringing you all a delicious brunch recipe which is semi home made  . This is a very short sweet post with some home made components and some store bought items . The whole idea behind this post is how to put it all together and enjoy this delicious brunch with your family , enjoy this in your patio or deck with you loved ones and make this day extra special 

This brunch has several components , both home made and store bought . First let me list the items in it. 

  1. Shakshuka (Home Made)
  2. Sriracha Hummus (Store Bought ) 
  3. Pita (Store Bought 
  4. Yogurt Parfait (Home made) 
  5. Orange Iced Tea (Home made) 

I will explain the recipes for shakshuka , yogurt parfait and the iced tea first . Then in the end will explain how to arrange all the components for your brunch 

First let’s see how to make Shakshuka . Shakshuka is a breakfast dish very popular in countries like turkey , morocco or Israel . This dish is basically poached eggs in a spicy gravy and its very very delicious to eat it as a brunch . The spicy tomato gravy complements so well with the eggs and its heaven when you dip your warm pitas in it . Now let’s see how to make this dish

Ingredients
  1. Eggs- 2
  2. Olive Oil- 1/2 TBSP
  3. Onions - Chopped 3 TBSP
  4. Garlic - Chopped 2 cloves
  5. Red Bell pepper - Chopped 2 TBSP
  6. Tomatoes- Chopped 1 medium
  7. Tomato Puree - 1 TBSP
  8. Cumin powder - 1/2 tsp
  9. Paprika - 1/2 tsp
  10. Salt - As needed
Instructions
  1. 1. In a skillet heat olive oil then add onions and garlic saute it till the raw smell goes and the onion is transparent
  2. 2. Now to this add cumin powder , paprika and salt saute for 30 seconds
  3. 3. Add red bell pepper saute for another 30 seconds .
  4. 4. To this add chopped tomatoes and tomato puree with little water and cook it for 30 seconds in medium heat .
  5. 5. Now make little wells in the tomato onion mixture . Break eggs and add one egg to each well .
  6. 6. Cover the skillet cook for 1 minute if you like wiggly yolk , 2 minutes for medium , I wouldn't recommend hard because it will burn the tomato base then
  7. 7. Optional garnish with some chopped parsley

Next we will go into the recipe for a delicious home made yogurt parfait. This recipe is inspired by a Rachel Ray recipe which I found when I was googling for an easy parfait recipe . So easy to make with few ingredients easily available in your pantry . I have made this using frozen mixed berries feel free to use any fruit of your choice like mangoes , peaches or even a mix of two different kinds of fruits and this is the simplest recipe I have made in my life LOL. So let’s see how it is made

Ingredients
  1. Frozen Mixed Berries- 3 Tbsp
  2. Yogurt- 3 Tbsp
  3. Granola- 2 Tbsp or more if you like
Instructions
  1. 1. If you are using frozen fruit make sure you defrost it over night in the fridge
  2. 2. Next day morning just 5 minutes before you serve your breakfast you can arrange your parfait . You can use mason jars , glasses or bowls anything of your choice .
  3. 3. First layer do fruits , then yogurt and top it off with granola just before serving , this is just to avoid the granola being soggy

The last component of the brunch which I am going to write is the delicious summery drink Orange Iced Tea.  I have made this iced tea from scratch freshly brewed and with some delicious fresh squeezed OJ some sweetener and lots of love thats my secret ingredient LOL.  Making this iced tea isn’t rocket science , its really simple & straight forward  with few ingredients put together . I am not going to talk much about this recipe , instead i will just give you the directions .

Ingredients
  1. Black Tea bags- 2
  2. Water - 2 cups
  3. Freshly squeezed orange juice- 1/2 cup
  4. Sugar - 2 tsp , more if you like it sweeter , also alternatively you can use honey , agave or maple syrup
  5. Orange Slice for garnish
Instructions
  1. 1. Brew tea as usual , you can brew it in your method . I normally bring water to a rolling boil then add the tea bags to this hot water .
  2. 2. Add few ice cubes to this and add your favourite sweetener ,keep it in the fridge for like 15 minutes .
  3. 3. While the tea is cooling down we can make fresh orange juice . Squeeze 2 or 3 fresh oranges and sieve it to avoid any seeds getting into it.
  4. 4. Now the tea should be cool add this fresh orange juice to it and add sweetener if required . The tea is ready to be served , you can refrigerate it till its ready to be served

So these are the components of the semi home made brunch , you can make the iced tea and parfait in advance , then make the shakshuka and finally warm the pita and serve it all together .

Thai Flavoured Sweet potato & Coconut Soup

Hello Everyone 

Since it is still cold  & grey all around at this part of the world  I would like to bring you all a soup recipe to warm your heart & body . A soul soothing and heart warming soup made from sweet potatoes with thai inspired flavours and then thinned out with some delicious coconut milk . So when I said thai flavours you must be thinking is this going to be vegetarian or does it have some hidden ingredients which are not vegetarian . But the good news is this soup is not only vegetarian but also vegan so it’s suitable if you have any kind of lactose intolerance or allergies . 
This soup is made from real & simple ingredients without any additives or colours added extra . The flavour is from all  natural ingredients and cooked with a lot of love . Most of the thai dishes does use palm sugar to finish the dishes , so the sweetness of the sweet potatoes really complements with the other bold flavours in the soup .  Also it is super filling you actually don’t need to serve it with any kind of bread , just a slightly tossed spinach salad would really go with the soup , but if you wanna thick crusty bread oh yeah go for it. 

Oh another thing I want to tell you is this soup was made in a very very easy method made in my favourite gadget called Instapot . Dont worry people if you dont have an instapot , you can always use a pressure cooker or even just a stove top sauce pan would also work . Only difference on a sauce pan it would take longer but in a pressure cooker it would faster , but in the instapot it will be done in a jiffy , isn’t that cool ? LOL 

I think I should explain to you how to make the soup now , instead of boring you with all these stuff LOL

For the Thai paste
  1. Thai Chilles - 2 or 3 (more if you want it hurt your a@$ LOL)
  2. Lemon Grass- chopped 1 tablespoon
  3. Onion - 3 to 4 shallots / 2 tablespoon chopped yellow onions
  4. Galangal- 1 inch piece
  5. Cilantro Stalks- 1/2 tablespoon (You can use the leaves for the soup)
For the soup
  1. Onions - half of a medium sized onion chopped finely
  2. Garlic- 3 cloves chopped finely
  3. Sweet Potatoes - 2 medium sized cubed
  4. Kaffir Lime leaves - 7 no
  5. Cilantro leaves - finely chopped 1/2 tablespoon
  6. Paprika - 1/4 teaspoon
  7. Salt - as needed
  8. Lime Juice - 2 to 3 tablespoons
  9. Coconut Oil - 1/2 tablespoon
  10. Water- 3 to 4 cups
  11. Coconut milk - 1/2 cup
Instructions
  1. 1. In a blender place all the ingredients for the thai paste with little water and blend it till smooth like really smooth . You can also use some thin coconut milk to blend the paste .
  2. 2. I will be explaining the method of making the soup in the Instapot here and will give the press cooker & stove top options in the notes
  3. 3. In the Instapot turn on the saute mode when the pot is hot add oil then add onions , garlic to it saute for 30 seconds .
  4. 4. Now add sweet potatoes , 2 tablespoons of the thai paste feel free to add more if you want it spicy .Add all the ingredients for the soup except the lime juice and coconut milk to the pot .
  5. 5. Cancel the Saute mode turn on manual , close the lid and 5 minutes on manual .
  6. 6. When the five minutes is up wait till the pressure releases naturally , open the lid then cool it little bit and puree it smoothly in a blender .
  7. 7. Now put back this puree into the instapot back , turn on saute mode add lime juice and coconut milk mix it add salt if required .
  8. 8. Turn off and garnish with cilantro leaves and serve hot .
Notes
  1. 1.So if you dont have an Instapot do not worry amigo , you can use a pressure cooker . If you are using a pressure cooker its the same method but it will take a bit longer to cook and naturally release the pressure.
  2. 2. What if you dont have a pressure cooker either , no worries mate a good old sauce pan would do the charm but the cooking time will be like 20 minutes .. And you may need to watch it closely to avoid any kind of mishaps
